Savoring Summer with Refreshing Recipes

Not quite ready to say goodbye to summer? Neither are we! Here are some of our favorite summertime recipes that will have you hanging on to those last precious moments of warm nights and bright, sunshine filled days. So next time you’re missing summer, try one of these delicious and refreshing recipes.

Tropical Gazpacho

3 mangoes, peeled and cut into chunks
2 cucumbers, peeled, seeded and chopped
2 cups buttermilk
1 tbsp lime juice
1 tsp rice vinegar
Dash of coarse salt
Dash of hot sauce (optional)
Basil leaves for garnish

Working in batches, blend mangoes, cucumbers, buttermilk, lime juice and vinegar until desired consistency. Season with salt and, if using, hot sauce. Refrigerate until chilled. Garnish with basil and serve.

Blueberries with Maple Cream

3 cups blueberries
¼ cup packed light brown sugar
1 tsp lemon zest
3 tbsp lemon juice
¾ cup heavy cream
¼ cup sour cream
¼ cup maple syrup

Combine berries, sugars, lemon zest and juice in a medium bowl and set aside.
Using a mixer on high speed, whip cream and sour cream in a large bowl until soft peaks form, about 2 minutes. Keep whipping, and add syrup. Whip until thick and velvety, about 1 minute. Divide berries among bowls and top with cream.

Grapefruit & Campari Ice Pops

4 ½ tbsp Campari
2 ½ cups red grapefruit juice
¼ cup, plus 2 tbsp sugar
1 tsp grapefruit zest
½ cup water

In a small saucepan, combine water, sugar and zest. Bring to a simmer, stirring to dissolve sugar. Pour syrup into a bowl and add grapefruit juice and Campari. Refrigerate until chilled. Pour mixture into ice molds and freeze overnight.
