Made in Ireland’s Diary Heartland, County Cork, from farm to fresh cow’s milk from multi-generation family farms, this cheese has a very distinct creamery, yet a semi-dry, tangy flavor. It gets its name from Oscar Wilde, a witty writer who dazzled the British Isles with his poems and prose in the latter half of the 1800s. Try it with some Dalmatia fig spread and toasted Marcona almonds or even over apple cobbler. Pairs well with a Cabernet or a wonderful Dark Oatmeal Stout.
