Winemaking handpicked and hand-sorted whole-cluster pressed; settled in tank for 48 hours racked to stainless steel tank; fermented at 55 degrees f post fermentation: 20% racked to french oak barrels 20% malolactic fermentation 80% aged in stainless steel tanks – filtered and bottled food pairings chicken dishes (chicken piccata roasted or grilled chicken with a light sauce) seafood (steamed lobster with butter baked shrimp roasted halibut with a light sauce) and soft mild cheeses (brie and camembert). Tasting notes light straw color and star bright. In the nose aromas of pineapple banana a hint of vanilla and caramel. Flavors are similar to the nose with an addition of pears and lemon rind.
