Summer is officially in full swing and that means your blender should be too! Nothing is as refreshing on a scalding hot summer day in Texas than a delicious frozen cocktail!
Frozen cocktails are surprisingly easy to whip up, contrary to the bartenders face when you order that third round of piña coladas! Most frozen drinks have the same basic ingredients:
– Liquor: typically tequila, rum, or vodka
– Liqueur: usually triple sec, blue curacao, or crème de cacao
– Fresh Fruit or Juice: think pineapple, strawberry, orange juice, etc.
– Ice: this is Texas.
Once you have it all laid out in the kitchen, just throw it all in the blender and hit the button for bliss!

Tamarind-Pineapple Margarita
Ingredients
- 2 oz. tequila
- 1½ oz. tamarind nectar
- 1½ oz. pineapple juice
- Splash lime juice
- 1 cup ice
- Garnish: cinnamon sugar (for rim)
Directions
- Rim a cocktail or margarita glass with cinnamon sugar: Wet the rim with a lime wedge, then roll the rim in a small dish of ground cinnamon and granulated sugar.
- In a blender, add the ice, tequila, tamarind nectar, and pineapple and lime juices.
- Blend until smooth.
- Pour the drink into the prepared glass.
- Serve and enjoy!
Chi-Chi
Ingredients
- 2 oz. vodka
- ½ oz. blue curaçao
- ½ oz. cream of coconut
- ½ cup pineapple (fresh, cubed)
- 1 scoop vanilla ice cream
- ½ cup ice
- Garnish: pineapple wedge or slice
Directions
- In a blender, combine all of the ingredients.
- Blend until smooth.
- Pour into a chilled margarita or highball glass.
- Garnish with a pineapple wedge or slice.
- Serve and enjoy!
Rock Lobster
Ingredients
- 1½ oz. coconut rum
- ¼ oz. dark rum
- ¾ oz. banana liqueur
- ½ oz. grenadine
- ½ banana (ripe)
- Dash pineapple juice
- Dash orange juice
- 1 cup ice
Directions
- Pour all ingredients except the dark rum into a blender.
- Blend until smooth.
- Pour into a chilled highball glass.
- Float the dark rum on top by slowly pouring it over the back of a bar spoon.
- Serve and relax!
Bushwacker
Ingredients
- 1 oz. dark rum
- 1 oz. Kahlua coffee liqueur
- 1 oz. dark creme de cacao
- 2 oz. cream of coconut
- 2 oz. milk
- 1 cup ice
Directions
- Blend all the ingredients until nice and smooth.
- Pour into a chilled hurricane glass.
- Enjoy!
Watermelon Slush
Ingredients
- 1½ ounces watermelon vodka
- 2 cups sliced watermelon
- 2 cups ice
Directions
- Combine the watermelon and vodka in a blender. Blend until watermelon is pureed.
- Add ice and blend again until ice is crushed and texture is slushy.
- Garnish with slice of watermelon
Prosecco Slushies
Ingredients
- 4 oz. vodka
- 16 oz. Prosecco
- 1½ cup chopped strawberries
- 2 oz. lime juice
- Ice
- Mint, for garnish
Directions
- In a blender, combine prosecco, strawberries, lime juice, and vodka. Fill the blender about halfway full of ice, then blend until the mixture is slushy.
- Divide slushies between glasses and garnish with mint.
Frozen Pineapple Cocktail
Ingredients
- 2½ oz. rum
- 4 cups pineapple chunks chilled
- 1½ cups ice
- 2 oz. lime juice
- 2 oz. cup coconut milk
Directions
- Combine pineapple, ice, lime juice, coconut milk, and rum into blender. Blend until smooth.
- Garnish with a pineapple round, lime wedge, and sprig of mint!
(Add more ice for a thicker frozen cocktail. For a sweeter drink, add in simple syrup!)
