Spicy Murphy’s Irish Coffee

(12 servings)

Ingredients

  • 1⁄3 cup plus 2 tbsp sugar divided
  • 1⁄4 tsp ground cinnamon
  • 2 cups skim milk
  • 2 cinnamon sticks
  • ½ tsp ground nutmeg
  • 2 1⁄2 quarts hot strongly brewed coffee
  • 3 tbsp fat-free non-dairy powdered coffee creamer
  • 2⁄3 cup Irish whisky
  • Fat free-frozen whipped topping, thawed for garnish

Directions

  1. In a small bowl, combine 2 tbsp sugar and ground cinnamon; set aside.
  2. Combine remaining 1/3 cup sugar milk, cinnamon sticks and nutmeg in a dutch oven. Cook over medium-low heat, stirring until sugar dissolves.
  3. Stir in coffee and creamer. Cover and heat 5 minutes to allow flavors to blend.
  4. Remove from heat; strain and discard cinnamon sticks and nutmeg.
  5. Stir in Irish whiskey. Pour into 8-ounce Irish coffee glasses. Garnish each serving with 1 tbsp whipped topping and sprinkle with sugar-cinnamon mixture. Serve immediately.

Sheridan’s Classic Irish Coffee

Ingredients

  • 1 cup freshly brewed hot coffee
  • 1 tbsp brown sugar
  • 1 oz Irish Whiskey
  • Heavy cream, slightly whipped

Directions

  1. Fill a mug with hot water to preheat it, then empty.
  2. Pour piping hot coffee into warmed glass until it is about 3/4 full. Add the brown sugar and stir until completely dissolved.
  3. Blend in Irish whiskey. Top with whipped heavy cream by pouring gently over back of spoon. Serve hot.
