It was the fortuitous encounter of a nest on a wild bush in the slopes of apalta vineyard that not only suggested the shape of clos apalta winery but also it’s location with it’s natural and vertical design. Canto de apalta is a red blend that was born from the relationship between carmenere merlot cabernet sauvignon & syrah. It represents the harmonic song of the unique community of birds that live in our vineyards. Vintage conditions in 2010 the fall – winter 2009 with the exception of june was much drier and cooler than usual with about 30% less rainfall in our vineyards. September was also cold so bud break happened a bit later than last season. The spring showed normal amounts of rainfall but with very low temperatures. These cold conditions disturbed the pollination and naturally lowered the yields. Fortunately during second half of december the normal sunny conditions returned. At that point the plants had from 8 to 10 days of delay in their development. Summer brought us cool nights preserving grapes freshness and inducing the concentration of aromas. Summer also brought the 5th biggest world earthquake ever recorded so the few days delay of the crop were a blessing in order to organize the winery and get ready to crush the grapes. Winemaking our winemaking philosophy remains very natural and we adhere to minimal intervention through the processes. Canto de apalta is a red blend that enhances the main characteristics of each grape into a symphony of the components; from carmenere its roundness and spicy expression; from merlot its red fruit and acidity; from cabernet sauvignon its complexity and elegant structure; and from syrah its exuberant and attractive aromas. There is no clarification and a very light filtration in our quest of creating natural wines and not disturb the natural balance. Tasting notes color: brilliant red purple inked color. Nose: attractive nose with spices ripe red and black fruit with light tobacco and chocolate hints. Palate: juicy and round palate with a velvety texture red fruit and spicy flavors aftertaste. Service and food pairing: enjoy now or cellar for a few years. Serve at 16-18°c (60 to 65°f). Ideal companion for meats and elaborate dishes. – casa lapostolle
