Domaine Cabirau Grenache Serge & Nicolas

After 27 years importing wine hps president dan kravitz took the plunge and purchased 13. 5 acres of vineyard land in roussillon. Named cabirau after the vineyard’s original designation the domaine lies on a hill below the famed cathar fortress of queribus. Planted to grenache it includes a prized 3. 5 acre parcel of 60 year-old vines. Named serge & nicolas after vigneron serge soulatge (who tends to dan’s vines) and winemaker nicolas burger of the vtv cooperative (of which dan is now a full-fledged member!) vineyards 13. 5 acres planted entirely to grenache comprised of 10 acres of vines averaging 20 years in age with a prized 3. 5 acre parcel of 60+ year old vines. Vinification vinified by nicolas burger at vtv. 48 hour cold soak followed by a 3 – 4 week fermentation at 68°f. 1 to 2 punch downs per day. Matured in tank. Unoaked.
