Age of vines: 18-25 years old vineyards: vina macetero-single vineyard. Sitting on the foothills of the andes mountain range in a village san clemente. Ageing: 6 months winemaking: grapes were gently hand harvested. After de-stemming and crushing the grapes were cold soaked at 5ºc for 48 hours. Inoculation with special selected yeast strains temperature controlled fermentation beginning at 20-22ºc and finishing at 25-26ºc in stainless steel tanks for 12-15 days. After malolactic fermentation the wine was racked into 2 year old french oak barrels of 225l where it aged for 6 months before bottling. Tasting notes: deep ruby red with violet rim. Pronounced fruity aromas reminiscent of black currant black cherries chocolate with notes of toast black pepper and cigar box. The wine is full bodied has ripe supple tannins with lots of juice fruit. The finish is long and lingering. – gryphus wine company
