”wine notes this limited edition sparkling wine is produced from our estate vineyards in the carneros region of sonoma california. Everything about the wine is carefully chosen from the hand-picked chardonnay and pinot noir grapes to the time honored methode traditionnelle of resting the bottles in our caves. Winemaking notes grapes are handpicked and transported to the winery in small bins where they are gently whole-cluster pressed to retain the delicate vibrancy and freshness. Only the first press with the most delicate flavors and aromas is used for this wine that is fermented in stainless steel tanks at 55-60°f. After 6 months of first fermentation the winemaking team assembles the final blend from 14 wine lots. The wine is then bottled and aged on the lees for 5 years to develop complexity and effervescenc.
