Accelerated ripening due to the warm season was slowed by cooler temperatures and light rain events mid-september. The timing and changes in temperatures aided in hang time development resulting in stellar fruit characters and flavors. How we made it after harvest the grapes were destemmed crushed and inoculated with premier cuvee and d254 yeasts. Fermentation lasted seven days on the skins with a daily pumpover regime.
