Age of Vines: 18-25 years old Vineyards: Vina Macetero-Single Vineyard Sitting on the foothills of the Andes mountain range in a village San Clemente Ageing: 4 months sur lies 100% Stainless steel WINEMAKING: Gentle machine harvesting during cold night in order to preserve delicate varietal character of the Sauvignon Blanc. Cold soaking for 4-6 hours before gentle pressing. Settling for 24 hours racked off its heavy lees before being inoculated with special selected yeast strains. Temperature controlled fermentation at 16-18°C for 18-20 days. Left on its fine lees for 4 months to enhance volume and richness. Clarified and filtrated before bottling in late spring. TASTING NOTES: Brilliant pale lemon color. Intense youthful aromas reminiscent of green apples fresh cut grass gooseberries and hints of elderflowers and mineral.
