Smith Story Cabernet Franc

Picked at 26. 1 brix and hand-harvested in the cool morning hours. The fruit was destemmed and delivered to a stainless steel tank for a long cool fermentation. During fermentation the cab franc received gentle punch downs and slow pump-overs until it was pressed off. The wine aged for 20 months in used bordeaux barrels. Harvest date: 9/29/2015. Cooperage: aged in 100% french oak 20% new 25% second vintage and 55% third vintage barrels coopered from select forests of taransaud orion sylvain and vicard for 18 months. Winemaking: crushed gently and dropped by gravity into 1. 5 ton bins cold soaked 48 to 72 hours then inoculated with a variety of yeasts hand punched and pressed directly to barrel where the wine finished both primary and secondary fermentations. The best barrels of the separate lots of cabernet franc were combined after 12 months of barrel aging and allowed to coalesce for an additional 6 months. Tasting notes: notes of bright red tart fruit on the nose including raspberry cranberry and currant accompanied by leather and smoke. Cantina le monde started in italy's friuli region in 1970. The winery is located in the prestigious region of friuli graves between the banks of the livenza and meduna rivers. The original structure built by the pistonti family in the 18th century remains on the property today. Le monde produces a range of still dry red and white wines along with sparkling and prosecco. Friuli-venezia giulia is located in the far north-east region of italy and borders austria and slovenia. Friuli-grave is one of 10 doc's within the region. It is expansive (6500ha) and the most wellknown producing a large portion of the region's wine. The name 'grave' like the region in bordeaux refers to the gravelly soils that differentiate this sub-region. Predominately white wine producing cabernet franc is more of a rarity from this area.
