Evening Land Seven Springs Pinot Noir

”Our 2013 Seven Springs Pinot Noir is a representation of Seven Springs Vineyard in its entirety; grapes are sourced from every diverse corner of this magical site including our old vine own-rooted Pommard block. The biodynamic farming of the vineyard showed its worth when the rains of 2013 threatened the vintage as this method gave the pinot noir a thick exterior and made it resilient to the harmful weather. The grapes were handpicked hand-sorted and destemmed; they began to ferment naturally after a 4-5 day cold soak in our open-top oak and concrete fermenters. Twice daily gentle punch-downs throughout the fermentation helped the soft extraction of the tannins. Aging occurred in 30% new French oak barrels for 16 months to preserve the elegance of the wine. VINTAGE For Oregonians 2013 provided a beautifully warm and sunny spring and summer. The vines experienced an early bud-break and an early bloom and we were coasting towards another gloriously rich and balanced harvest.
