Sur-lie ageing in stainless steel tank where its fine lees were regularly stirred and re-suspended for 7 months allowing the flavor and aroma molecules to integrate into the wine. It’s a very distinctive wine with notes of flinty smoked green apple on the nose generous lime and almond mousse in the mid-palate and lime zest on the finish.
