Produced with grapes chosen bunch by bunch this wine is aged in oak and wild chestnut barrels. The original ruby colour takes on an orange hue over the prolonged ageing process and the wine assumes a delicate violet aroma and a gentle hint of bitterness making it a perfect match for roast game and red meat in general. It is a dry wine and leaves the palate completely refreshed qualities that make it an excellent after-dinner drink as well. Despite its relatively high alcohol content its extraordinary softness makes it extremely light on the palate and more delicate on the stomach. The most discerning connoisseurs consider it to be among the best italian wines to accompany roasts. Furthermore it was the first italian wine to be classified with the d. O. C. G.
