”DESCRIPTION A passionate advocate of the Mediterranean Art de Vivre and owner of benchmark estates in the South of France Gerard Bertrand reveals all the unique expression of the ‘Terroirs’ of the region. Situated between the Corbieres mountains and the lakes and beaches along the Mediterranean coast Fitou benefits from a great variety of terroirs and micro-climates which explain the remarkably rich bouquet of aromas found in its wines. VINIFICATION AND MATURING Harvesting starts only after precise monitoring of the degree of the ripeness and daily tasting of the grapes that are picked by hand and meticulously sorted as soon as they are brought into the cellars. The 2 varieties are vinified separately to extract the best potential from each one. The Carignan is vinified under CO2 maceration for 10 to 15 days whilst a traditional maceration with total destemming is used for the Grenache.
