
Girardin Chass Mont Village Vieilles Vignes
The vineyards are located near the village of Chassagne Montrachet in the south of the Co;te de Beaune Burgundy. The grapes come from the Les Chaumes parcel for this cuvee Vieilles Vignes. Soil : Clay and limestone. The slope is very low. South East exposure. 100% Chardonnay - Guyot pruning with different seasonal processes in the vineyard (pruning trellising on wires/tying-in thinning fruit-bunches). The grapes are harvested by hand and sorted out when picking the grapes. They are lightly pressed then in a pneumatic press at a low pressure to get a slow extraction. After a gentle racking of the must the wine is put in French oak casks of 228 liters (15% of new oak) for both of alcoholic and malolactic fermentations with wild yeasts and wild anaerobic bacteria during 14 months.
