2018 was the ideal vintage for an elegant refined pinot noir. The foggy summer mornings resulted in a slower ripening than normal and a later harvest but the late season warmth ensured full ripeness meaning that the wine has the perfect balance between lively acidity a firm tannic structure and ripe fruits. All lots were destemmed to allow the expressive fruit to come through this concentrated fruit required only a three day cold soak. After fermenting for ten days the wine was off to age keeping with our philosophy of minimal intervention winemaking. This wine was aged for eleven months in a combination of franois frres and rousseau french oak barrels with 20% new french oak.
