The wine is 100% Cabernet Sauvignon from the Vaca Vista Vineyard located in Oak Knoll. This is the first N&N wine from this appellation. The wine is macerated on the skins for 2 weeks and then aged in 48% New French oak for 16 months. It has purple color with well formed legs. Vaca is dry with a medium-full body that is balanced with nice acidity and medium chewy phenolics. Ripe almost chocolate flavors of Cabernet show with some dark fruit and hints of dust. No tobacco leaf nuance here. Very Steakhouse in style! Think Slab and a Cab. Bear Score: 94
