Found in Doc Swinson’s backyard the mighty Garryana oak grows primarily in the Pacific Northwest from northern California to southern British Columbia. It is a rare wood to be used in the maturation of spirits on account of it being a difficult wood to cooper; similar to french oak in structure but with richer and darker elements of American white oak. These Garryana casks take what is normally described as caramel and cinnamon found in your typical bourbon and transform them into molasses and clove with an undertone of Kansas city BBQ caramelized on the grill. Nose: Kansas City BBQ smoke sweet plum sauce. Palate: Molasses cookies confectioners sugar black tea and fruit leather. Finish: A little cocoa and fig jam cling to the tongue.
