Castello Di Bolgheri Varvara

The name Varvara was chosen in honour of Baroness Varvara Wrangel spouse of Count Ugolino della Gherardesca and grandgrandmother of the present-day owner Federico Zileri. THE HARVEST The grapes are harvested manually with selection on the vineyard and as well before destemming. THE VINIFICATION Delicate treatment of pumping over and delestage a concept to extract sofhtly the precision of the fruit and clear tannin. The wine remins in contact with the skin for approximately 20-25 days. Fermentation takes place in stainless stell tanks at a controlled temperature.
