Indomita Pinot Noir Duette Vineyard
Casablanca Valley Cold weather with prevailing cool and saline winds from the Pacific Ocean. Grapes ripen at a leisurely pace. 15-years old vertically trained vineyard with drip irrigation flat ground and a few gentle Hillsides. Vinification: Maceration for 48 hours. Fermentation at 24-25°C without pumping over and gentle pressing once or twice a day.Then the wine is racked and sulfites are added. Aging: Approximately 10 months in 228-liter French oak barrels. Tasting Notes:Pale red with clay hues at the bottom of the glass.Pure wine with a clear transparent expression. Nice and seductive aromas of ripe red berries rosewood and dried cherry that add to the notes of gun powder smoke and tobacco(from the barrel) to create a deliciously delicate assortment of aromas. Fragile and unpretentious yet firm texture.Remarkable elegance and balance. A very fine line between subtleness and strength. Marries well with duck tune fish grouper rabbit terrines and serrano ham.
