Tasting Notes: Brilliant red with violet npotes. It presents a complex nose with red and black fruits and spicy notes. In the palate is fresh and sharp with ripe fruit elegant after taste. Enjoy with pastas with meat sauce paellas rabbit stew with couscous bean stew and mature cheeses. Vineyards: Land: Mingre dry coastal area 45 kms. from Pacific Ocean 193 MASL. Soil: Red granite with high iron oxidation and high amount of minerals such as quartz. Excellent hydric reserve due to its clay content which allows an unirrigated regimen. Harvest: Handpicked with cluster selection during the first week of may. Vinification: Fermentation: In concrete tanks between 24-26C for 12days Aging: 4 months in concrete tanks. - J. Bouchon
