Maxville Sauvignon Blanc

”Pale straw in color our 2015 Sauvignon Blanc is made with 100% Estate Grown Musque clone and was bottled at our Chiles Valley ranch. The complex nose is richly expressive blending Jordan almond with lemon aromas the palate has flavors of lemon cream and guava with a crisp clean finish. Pairs delightfully with shellfish white fish summer salads and soft creamy cheeses. Time in barrel – sur lees aged for 8 months 60% stainless steel 30% barrel (mostly neutral French oak balanced with new French oak and acacia) 10% concrete Drink between 2016 – 2026 Winemaking and Elevage We harvested our Sauvignon blanc in two separate picks the first pick was pressed whole cluster and split between stainless steel and neutral French oak barrels for fermentation. The second pick was crushed to tank and allowed to macerate over-night; once pressed the must went into stainless steel tank concrete tank and French oak and acacia barrels.
