FERMENTATION PROCESS Cold pre-maceration takes place at 8ºC for 5 days. Fermented in stainless steel tanks for approximately 14 days at 28ºC then rests on lees for 16 days. 100% malolactic fermentation. TASTING NOTES Intense red color. Aromas of fresh red and black fruits with hints of eucalyptus and cassis. Its oak aging contributes notes of chocolate and vanilla. The palate is unctuous gentle and balanced.” – Tapiz
