This 100% Sauvignon Blanc is sustainably grown and hand-picked before dawn then delivered straight to the winery where 25% of the fruit is cold soaked for 12 hours to build structure before being pressed. Once the grapes are pressed the juice is transferred to stainless steel tanks and aged on the lees. The wine has straw color with green highlights and good legs. It is dry and medium-bodied with fresh acidity and very light phenolics. Tolosa is fresh and focused with citrus and a bit of minerality. Clean. BearScore: 90
