Prosecco’s Bubbly History
Prosecco is made from a blend of grapes that must be at least 85% glera, with the rest being local and international varieties including verdiso, bianchetta trevigiana, perera, chardonnay, pinot bianco, pinot grigio and pinot noir.
The Glera grape is thought to be of Slovenian origin and was probably cultivated in the vineyards of the Italian village of “Prosecco” in Trieste which shares a border with Slovenia. The name “prosecco” is actually Slovenian, from prozek, or “path through the woods.” Prior to being called Prosecco, the region was known as Puccino.
Glera is a highly productive grape that ripens late in the season. It has high acidity and a fairly neutral palate, making it ideal for sparkling wine production. Glera’s aromatic profile is characterized by white peaches, with an occasional soapy note.
We know Prosecco as a sparkling wine, but it didn’t actually have any bubbles until the 19th century. The Carpenè Malvolti winery was the first to produce Prosecco as we know it today. Modern Prosecco comes in three levels of “perlage,” which is just a fancy word for bubbles. There’s the bubbliest, spumante, the second-most, frizzante, and the entirely still, tranquillo.
