It’s time for your annual thumping! While not an official state holiday, Watermelon Day gives us Texans an opportunity to honor the juiciest jewel sold on roadsides out of trucks all summer long with watermelon drinks. Botanically speaking, the watermelon is a berry—tell that to the world record holding 351-pound watermelon!
Never you rind because all the makings for mouthwatering watermelon cocktails like the ones below can be plucked from Spec’s aisles of spirits and mixers.
Minty ‘Melon Magic
Ingredients
2 oz tequila
¾ cup lemonade
2 tbsp fresh mint
Directions
Puree watermelon and lemonade in blender.
Add tequila and mint. Stir well and pour into tall glass with ice cubes. Enjoy!
Watermelon Rum-ba! – serves two
Ingredients
4 oz rum
2 oz coconut water
¾ oz Aperol
1 small watermelon
10 dashes Angostura
10 dashes celery bitters
Directions
Slice off top of watermelon and scoop out all the fruit.
Put fruit in blender with 3 oz rum, coconut water, Angostura, Aperol, bitters and ice.
Blend well then pour into hollowed out rind.
Gently float remaining oz of rum on top, add two festive straws and serve!
