Lone Star 1835 Bourbon

Texas Caviar
2, 15.5 oz cans black-eyed peas, rinsed & drained15.5 oz can yellow corn, drained
10 oz can diced tomatoes & green chilis, drained
1 green pepper, finely chopped
1 red onion, finely chopped
1 ripe avocado, peeled & cubed
½ cup Italian dressing
2 tbsp lime juice
¼ tsp salt
Combine peas, corn, tomatoes, pepper and onion in a bowl. In a small bowl, blend dressing, lime juice and salt. Cover and chill for 1 hour. Stir in avocados and serve with tortilla chips.
