Each month, we highlight one of the unique Texas distilleries that make our state stand out, and this month we find ourselves at the Spirit of Texas distillery in Pflugerville.
The “Biggest Little Distillery in Texas,” has really made a name for itself over the last five years. Founded in 2009 by Brad Haden, Shaun Siems and Jason Mailk, the Spirit of Texas distillery is famous for its Pecan Street Rum and Straight Silver Rum.
Truly a one-of-a-kind, Pecan Street Rum is infused with only the best Texas pecans and molasses. It is known for its subtle sweetness, followed by a delicious sensation of pecans, of course!
Straight Silver Rum is also made from a molasses base and aged with pecans, and is then filtered to produce its clear color in the classic silver rum style.

Pecan Street Mojito
2 oz Pecan Street Rum
1 ½ oz pomegranate juice
1 oz lime juice
¾ oz simple syrup
8 mint leaves
Splash of club soda
Combine all ingredients except mint leaves and club soda in a glass filled with ice. Crush half of the mint leaves and stir into mixture. Top with a splash of club soda, garnish with the remaining mint leaves and enjoy!
